This is one of our favorite grilled chicken recipes at my house. Nicely spicy without being scorching hot..full of flavor and low fat/low calorie. Add to it that prep is quick and easy and that makes it a winner in my book. The only thing that takes a little time is juicing enough lemons to get an entire cup of lemon juice. Consider this your forearm workout for the week.
1/4 cup paprika
2 tbsp. cayenne pepper
1 cup fresh lemon juice
3 cloves garlic, minced
1.5 tsp fresh chopped ginger
1.5 tsp salt
4 boneless chicken breasts
In large bowl, stir together paprika, cayenne powder, lemon juice, garlic, ginger and salt. Rub chicken with mixture and let marinate for 3 hours.
Heat grill or smoker to Medium Heat (around 350 degrees)
Smoke or grill chicken for about 30 minutes, until skin slightly charred, turning a couple times.
